We’ll make classic French bread, 100% whole-wheat hearth bread and struan, a delectable Scottish bread made with oats and brown rice. You’ll also learn the leavening process, how to substitute other grains, and different bread forms such as boules, baguettes, sandwich loaves and rolls. Lisa comes from an Italian bakery family, has been baking for decades and bakes for Dulce, a bakery in Santa Fe.
