Hot Stuff with Deborah Madison
125 North Guadalupe Street
Known as a chef, cooking teacher and writer whose specialties are seasonal vegetable recipes with an emphasis on farmers markets produce and heritage varieties, DEBORAH MADISON is also a home gardener. Connecting people to the food they eat, its source and its history, has long been her work, and writing is one way to reveal the deeper culture of food. Her interests lay with issues of biodiversity, seasonal and local eating, farmers markets, small and mid-scale farming, farmers and ranchers, gardens and gardeners. The meal for this class includes Romesco sauce on crostini, three fennel braise with pine nuts, goats cheese and arugula, January cabbage salad with mustard vinaigrette, lentil soup with walnut marjoram cream, roasted cauliflower and tomato curry with ginger chutney, sauteed bananas with blood oranges and dates. The menu embraces her food philosophy and features some recipes from her recently revised cookbook, THE NEW Vegetarian Cooking for Everyone.
